I needed to make some baked goods for a Bake Sale at Gemma’s school, so I decided to make some Meringues. In the past I had used Super Fine Sugar, but I found a new recipe online using Powdered Sugar. Supposably, this is the way the French make Meringues! It was super easy! Beat 4 Egg White until foamy, then slowly add 2 1/4 cups of powdered sugar. Beat until it forms stiff peaks! I have a Table Top Mixer, so I just put it on and work away on other things. You can pipe the meringues onto a cookie sheet, but for easier clean up I just spooned them on. The recipe said it makes 36, but I was able to make 24. Try to put them all on 1 cookie sheet, or 2 smaller sheets. I lined my sheet with parchment paper. You bake them at 200F, but it suggests putting a spoon in the oven to keep it open a bit. Then bake for 3 hours!!
The good news is when I put the 2 ingredients into my Recipe Builder, the entire recipe came out to 30 PP! Divide it by 24, each Meringue is 1PP!! 2 is 2PP! But 3 is 4PP!! Either way it is a good treat, without many points!! My Meringues bubbled a bit, but they tasted delicious!! We are making these again for our Holiday Party!!

BTW – I lost 0.8 lbs last week!
