Last week Gemma and I took a class at Le Dolci to learn how to make Macarons! The teacher made the first batch and then, as a class, we made the 2nd batch! Above Gemma is sifting the Almond Flour and Icing Sugar together!
Once it was sifted together I think we added egg whites (but I could be wrong) and food colouring. We now had to combine them to make it dough like.
While we had been sifting, others were preparing the Italian Meringue.
The meringue was added to our drier ingredients. We now kept folding it until was was smooth, like a cake batter!
Then came the fun part, piping! We took turns practicing our technique. This step is harder than it looks!
Once the shells cooled down we piped in Chocolate, Lemon and Coffee Ganache to make the little sandwiches.
And we each got to took a few home! This is one treat we didn’t share with others!! They were delicious!
We always have a great time baking at Le Dolci!! Everything is included, you just show up! This Sunday, October 28th, Gemma and I will be back making Croissants! I think there are seats still available!!
